Brunch Combos


We know, We know- another Mother’s Day blog post this week. It’s almost here though and we want to do our best to help you have all of your bases covered for this special day. Because well, moms & other mother figures in your life deserve it after all they do for us! Today we have 3 brunch ideas for the last minute planner that are relatively quick and easy. 

Breakfast Burrito Bar & Mimosa Margarita 

To keep things going smoothly, we recommend doing as much prep the day/night before as possible. This includes cutting up all the toppings & making the homemade salsa that we shared below and putting them into individual bowls. You can even cook the sausage and bacon the night before and reheat it in the morning if you’re really in a pinch. Then, all you need to do the morning of is scramble your eggs! Here are the things you will need:

-Tortillas

-Eggs

-Bacon

-Sausage

-Fried potatoes or hashbrowns

-Homemade salsa: Mix equal parts onion & tomato. Top with cilantro & a squeeze of lime juice

-Spicy sour cream drizzle: Mix sour cream, a splash of water, & taco sauce to taste. Add hot sauce if you like a little extra kick!

-Topping ideas: Avocado, shredded cheese, black olives, peppers/jalapenos (Add anything else that sounds yummy!)

Mimosa Margarita:

Ingredients:

1/4 cup triple sec

1 cup tequila

2 tablespoons freshly squeezed lime juice (about two limes)

1 bottle of champagne, chilled

3 cups orange juice

2 limes sliced thin (optional)

2 oranges sliced thin (optional)

Directions:

Combine all the ingredients in a large pitcher, and serve in salt-rimmed glasses.

 

Spice up your Mom’s morning by trying this Mexican themed brunch! Enjoy the spice of a breakfast taco and cool your taste buds down with this marg inspired mimosa!

French Toast Bar & Blackberry Mint Mimosa:

Here’s something sweet & refreshing for this Sunday brunch! Again, make things easy on yourself by prepping & cutting up your fruit and getting all of the toppings into their own serving bowls the night before! In the morning, you will just have to get some French toast made. It is pretty straightforward but if you’ve never attempted it before, here is an easy recipe. You can get extra fancy with this one by getting different flavors of syrup or by finding a different French toast recipe on Pinterest. Here is a lemon vanilla French toast recipe that will have you drooling. French toast topping ideas:

-Whipped cream

-Maple syrup (Optional: different flavors!)

-Powdered sugar

-Nutella

-Butter

-Chocolate chips

-Fresh raspberries, blueberries, strawberries, blackberries

Blackberry Mint Mimosa:

Ingredients:

2-1/4 ounces fresh blackberry juice

5 spearmint leaves

Coarse sugar, for muddling

1/4 ounce simple syrup

Dry champagne, well-chilled

Fresh blackberries, for garnish (optional)

Spearmint sprig, for garnish (optional)

Directions:

To make the blackberry juice, muddle fresh blackberries and strain the juices through a cheesecloth. Add juice, mint and coarse sugar to a cocktail shaker. Muddle to release mint oils. Add simple syrup and shake well. Strain mixture into a champagne glass. Top off with champagne. Garnish with fresh blackberries and/or mint sprig. Serve.

The sky's the limit with toppings on this yummy brunch idea. If you’re not a French toast fan, this would also be great using pancakes or waffles! Either way, the mimosa will be sure to wash it down perfectly.

Bloody Mary Bar

Lastly (and our personal favorite), a bloody Mary bar to get your Mother’s Day started! We love that they are a meal and drink all in one and with a build your own bar you will be sure to impress. This is also perfect because you can build them as big or small as you’d like depending on what toppings you have! Here are a few options to pair with your preferred vodka & mix:

-Lemons

-Pickles

-Green olives

-Cheese cubes (Don’t be afraid to get a variety of options!)

-Bacon

-Celery

-Pepperoni 

-Shrimp (cocktail shrimp will be the quickest option)

-Beef sticks

-Hard boiled eggs

-Celery salt or other seasoning of your choice for your glass rim

-Optional bigger toppings: Mini sliders, chicken wings, mini tacos, onion rings,  or mozzarella sticks (These can just be bought frozen from the store and cooked!)

A true loaded bloody would be sure to hit the spot on Mother’s Day! This is the perfect way to personalize your drink and would be relatively easy for a bigger group.
